Tropical Granola



1 cup rolled oats

⅓ cup shredded coconut

⅓ cup slivered almonds

1 tablespoon flax seeds

1 tablespoon sunflower seeds

2 tablespoons brown sugar

2 tablespoons honey

1 ½ tablespoons peanut oil

2 dried pineapple rings, diced



Preheat oven to 250 degrees. Line a sheet tray with parchment paper.


Combine the oats, coconut, almonds, flax seeds, sunflower seeds and brown sugar in a large bowl. Stir to combine.


In a small bowl, combine the honey and oil. Pour this mixture over the oats mixture and stir to combine.


Pour the mixture onto the prepared sheet pan. Bake for about an hour, stirring every 15 minutes.


After the granola has cooled, stir in the pieces of dried pineapple.
