Chocolate Toffee Cookies

1 1/2 cup Bob’s Red Mill 1 To 1 Baking Flour

1/2 cup cocoa

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 teaspoon xanthan gum

2/3 cup butter, softened

1 cup sugar

1 teaspoon vanilla extract

1 egg

1/3 cup buttermilk

8 ounce bag toffee pieces



Preheat oven to 350 degrees.

Combine flour, cocoa, baking soda, salt and xanthan gum. Stir to combine and set aside.

Cream the sugar and butter until the mixture is light yellow. Add the vanilla extract and egg, and mix well. Add half of the flour mixture, stir to combine. Add the buttermilk and mix thoroughly. Add the remaining flour mixture and stir until well combined. Stir in the toffee pieces.

Drop by rounded teaspoons on a sheet lined with parchment paper. Bake for 7-9 minutes.
