Breakfast Sausage


I love this breakfast sausage. It’s certainly not bland, but it’s also not overly spicy.


4 teaspoons salt

1 teaspoon cayenne (If you want spicy breakfast sausage, use 2 teaspoons cayenne.)

1 teaspoon dried sage

1 teaspoon black pepper

1 teaspoon ground coriander

1 teaspoon red pepper flakes

1/2 teaspoon thyme


4 pounds ground pork


Combine all of the dry ingredients. Pulse in spice grinder.


Fold the spice blend into the ground pork until it is well combined.


Form into patties, and fry in a skillet.
