Flammekueche Gratinée


1 pizza crust

2 tablespoons crème fraîche

3 ounces bacon

1 small onion, julienned

2 ounces Comté, grated



Preheat oven to 350 degrees Fahrenheit.


Prepare the pizza crust according to recipe.


Cut the bacon into small pieces.  Render it in a small skillet over medium-low heat until it is crispy.  Remove the bacon from the pan, but do not discard the fat.


Raise the temperature to medium.  Add the onions to the fat that this still in the skillet.  Cook them until they have caramelized, about 10 - 15 minutes.


Spread the crème fraîche on the prepared crust.  Top with bacon and onions.  Garnish with cheese.


Bake the flatbread for 10-15 minutes until the cheese has melted.


Cool for 5 minutes until cutting.
