I was diagnosed with Celiac Disease during the summer of 2019. I embraced the gluten-free diet because of the dramatic difference that it made in my health and quality of life. However, I also found that some gluten-free foods were just not very tasty. Fast forward to the spring of 2020... Being quarantined at home because of the Covid-19 pandemic gave me time to learn a lot about gluten-free cooking. It turned out that cooking during this time was my happy place, and I started sending pictures of my creations to some friends. One friend eventually asked, "Do you ever just 'slum it'?" Well, even though I must follow a strict gluten-free diet, I don't have to slum it. I hope that you enjoy these recipes!
