Asian Cucumber Salad

1 cucumber, spiralized

1 tablespoon gluten-free soy sauce

1 teaspoon rice vinegar

1 teaspoon sesame oil

1 teaspoon sesame seeds

Combine the soy sauce, rice vinegar, and sesame oil. Mix well.

Mix the dressing with the cucumbers. Let rest for 5 minutes.

Garnish with sesame seeds.

Yield: 2 salads
