Pico de Gallo

Pico De Gallo

1 small onion, small dice

3 small tomatoes, medium dice (When tomatoes are not in season, Roma tomatoes are usually reliable.)

3 serrano peppers, brunoise

2 tablespoons cilantro, finely chopped

Juice of 1 lime

Mix all ingredients and refrigerate. Don’t add salt until you’re ready to use it because the salt will draw moisture from the tomatoes and make the pico watery.
